Ingredients

  • Beef chuck

    Arm pot roast, separable lean and fat, trimmed to 1/8" fat, all grades, raw

    4 lb or 1.81kg

  • Olive oil

    Salad or cooking

Directions

  1. Preheat oven to 450F (230C). Place beef in a roasting pan, cover with a clean kitchen towel or plastic wrap and let stand at room temp for 20 mins.
  2. Using a glazing brush, brush beef with olive oil, then season with sea salt and pepper to taste.
  3. Bake for 20 minutes, then reduce temp to 350F (180C) and bake until cooked to your taste, between an extra 1 hour to 1 hour and 20 mins.
  4. Remove beef from oven, transfer to a plate, cover with aluminum foil and let rest for 20 mins. Carve and serve with gravy and potatoes.
