Strawberry French Toast
Toast the bread and place in an oven dish. Mix/beat milk, ounce sugar and eggs. Pour mixture over bread and refrigerate for 15 minutes or overnight.
Breakfast morning:
Preheat oven to 400 degrees. In a large frying pan, melt butter with another ounce of sugar and cook the soaked slices of bread until golden on each side. Place slices of bread on an oven rack and arrange strawberry slices. Sprinkle with third ounce of sugar and bake for 4 minutes until berries start melting.

Broiled sesame tofu
Heat the broiler to high and arrange a rack in the top third of the oven. Cover a baking sheet with foil; set aside.
Whisk the soy sauce, vegetable oil, and a pinch of pepper in a medium shallow bowl to combine. Dip the carrots and tofu pieces into the soy sauce mixture to coat (let the excess sauce drip off and back into the bowl), then lay the pieces on the baking sheet so they are not touching. Set the remaining sauce aside.
Broil the carrots and tofu until browned on all sides, about 20 minutes total, turning the tofu every 5 minutes to brown on four sides and flipping the carrots after 10 minutes. Remove from the oven.
Add the chopped scallion, vinegar, and sesame oil to the reserved sauce and stir to combine. Add the broiled carrots and tofu to the sauce and toss to coat. Serve.
Roasted Green Beans
Preheat oven to 400°F.
Wash, dry well, and trim green beans.
Put green beans on a small baking pan or dish and drizzle with olive oil, salt, and pepper.
Use your hands to be sure all the beans are evenly coated and spread them out into 1 layer.
Roast for 20-25 minutes, turning after 15 minutes, until beans are fairly brown in spots and somewhat shriveled.
Serve hot or at room temperature.

Edamame and Pear Crostini
Boil edamame in salted water for about 8 minutes. Remove beans with a slotted spoon and place in ice water for a couple minutes to cool, then drain.
Set aside 1/4 cup of the whole edamame and place the remaining edamame in a food processor or blender and process until coarsely chopped.
In a separate bowl, combine mashed edamame with the whole edamame, three tablespoons olive oil, chopped mint, cheese, salt, and pepper.
Toast bread. Top each slice with some of the edamame mixture, garnish with chopped pears, and serve.
