- Make miso paste: add teaspoons of hot water if necessary until it is a smooth paste and add honey to sweeten to taste.
- Slice eggplant in half and score diagonally, from one side and then the other until you have scored quadrangles.
- Brush flesh and skin of eggplant with sesame oil.
- Cook eggplant flesh side down in air fryer for 8 mins at 200c.
- Flip and brush on miso paste. Cook for another 5-8 minutes until soft and suitably charred.
- Sprinkle over sesame seeds to finish.
