Directions
- Start by chopping six slices of bacon and place them in a skillet over medium-high heat. Cook until your bacon fat starts to render, then add in your chopped bell pepper and onion. Cook until your bacon is crispy and your veggies are caramelized. Add in your minced garlic and cook for an additional 60 seconds, then remove from heat and set aside.
- In a large mixing bowl add 2 pounds of 93/7 lean ground beef, 2 eggs, 3/4 cup bread crumbs, 1/3 cup fat free Fairlife milk, 1/4 cup ketchup, 1 Tbsp Worcestershire sauce, 1 Tbsp Dijon mustard, 1/2 Tbsp garlic powder, 1/2 Tbsp onion powder, 1/2 Tbsp salt, 1 tsp black pepper, 1 tsp Italian seasoning, and 1 tsp paprika. Lastly, add in your cooked veggies and bacon.
- Mix everything together really well. Once all of the ingredients are mixed into the beef, place your mixture into a casserole dish or loaf pan. Form the meatloaf into your desired shape.
- Cook in the oven for 40 minutes on 375°F. After 40 minutes, remove from the oven to add your glaze.
- Brush 1/2 cup of BBQ sauce (or glaze of choice) onto your meatloaf. Be sure to cover the entire meatloaf with sauce for an even glaze. Place back in the oven for another 20-30 minutes, or until your meatloaf is cooked through.
- After your meatloaf is done, remove from the oven and cut into your desired serving sizes. Ensure there is no pink in the middle. If there is, simply place back in the oven for another 5-10 minutes or until no pink remains.
