- Banana Nut Pancakes 1. In a mixing bowl, mash 1 banana, and then add ½ cup almond milk, 2 cups almond flour, 3 eggs, 1 Tbsp baking powder and 1 Tbsp tapioca flour. Mix until combined. 2. In a large pan, heat 1 Tbsp coconut oil. Pour in some batter to form pancakes, and cook for about 3 to 4 minutes per side. Transfer to plates and top with 1 sliced banana, ½ cup walnuts, and ⅓ cup maple syrup.
