  1. Thaw corn in a small bowl in the microwave for 30 seconds. Mix in refried beans and cheese.
  2. Gently spread the beans, corn, and cheese mixture over half the tortilla, folding the other half over the top.
  3. Place tortilla in a large nonstick skillet over medium heat. Cook until the bottom of the tortilla becomes golden brown - use a spatula to lift it and take a peek. Flip over and cook until the other side is also golden brown and contents are heated through.
  4. Slide quesadilla onto a cutting board and cut into 4 wedges. Top each wedge with salsa and Greek yogurt.
