  1. In a large skillet warm oil over medium high heat. Brown beef. Transfer to a slow cooker along with onions garlic and ginger.
  2. In large bowl whisk together coconut milk, honey, curry powder, and cayenne. Pour into skillet. Cook to loosen pan drippings. Pour in slow cooker. Low for 7-8 hours. High for 4-5 hours.
  3. Stir in cherry tomatoes and let them warm and soften in stew.
