  1. Place noodles in a heatproof bowl, cover with boiling water and set aside for 5 minutes. Reserve 1/4 cup of the soaking water and thoroughly drain noodles.
  2. Heat oil in a large non-stick skillet or wok over medium-high heat and crumble in the beef. Cook, stirring occasionally, for 2-3 minutes or until browned, then push meat to the side of the skillet.
  3. Add peas and bell pepper and stir-fry for 2-3 minutes or until tender-crisp.
  4. Add drained noodles, reserved cooking water, oyster sauce and vinegar to the beef mixture. Cook, stirring for 2 minutes or until heated through.
  5. Divide between bowls.
