  1. 1 . Heat the oil or bacon fat in a large nonreactive pot or rondeau over medium-low heat. Add the onions and apples and sweat until the onions are translucent and the apples are slightly soft, about 5 minutes. 2!. Add the water, wine, vinegar, sugar, and jelly.
