Directions

  1. Heat the olive oil in a saucepan over medium heat. Add the onions and garlic and cook until soft. Season with salt and pepper and add the spinach. When the spinach is wilted, add the broccoli and chicken broth, plus 1 cup water. Bring to a boil and reduce to a simmer. Simmer for 10 minutes, until broccoli is tender. Transfer soup to a blender and puree. Add back to the pot and stir in the coconut milk. When the soup is heated through, top with the cheddar and bacon before serving.
