  1. Preheat oven to 350F.
  2. Peel and boil potatoes in salted water for 8 minutes.
  3. Whisk together eggs, any salt/pepper/spices/herbs, and cheese. Add any other vegetables as desired (e.g., red bell pepper). Reserve some cheese.
  4. Transfer potatoes into eggs, and add broccoli into salted water. Boil for 2-3 minutes.
  5. Transfer broccoli into eggs and mix together.
  6. Heat a skillet. Add 1 tbsp butter and let it melt. Pour in egg mixture. Heat until bottom turns light brown, add a dusting of cheese, then transfer to oven. Cook for 5-10 minutes, then turn the broiler on and cook until cheese is bubbly and golden brown. Serve hot or cold.
