- In a bowl, whisk together the eggs with a splash of water and seasonings; with salt, pepper and garlic powder. Set aside.
- Heat a small non-stick pan over medium heat with a tbsp of olive oil and sautee spinach until wilted.
- Pour the egg in and add the pieces of burrata cheese. Layer in the tomatoes, lower heat and cover until set.
