Directions

  1. In a bowl, whisk together the eggs with a splash of water and seasonings; with salt, pepper and garlic powder. Set aside.
  2. Heat a small non-stick pan over medium heat with a tbsp of olive oil and sautee spinach until wilted.
  3. Pour the egg in and add the pieces of burrata cheese. Layer in the tomatoes, lower heat and cover until set.
