  1. Season the chicken breast with salt and pepper.
  2. Heat olive oil in a large soup pot over medium heat.
  3. Add the chicken and cook for about 8 minutes without flipping (5 minutes for thin-cut breasts). Flip and cook the other side until browned and the internal temperature reaches 165°F.
  4. Transfer the chicken to a cutting board and let it rest for five minutes.
  5. Slice the carrots, fennel, and cooked chicken.
