  1. Preheat oven to 180°C / 350°F / Gas Mark 4.
  2. Cut the chicken into strips.
  3. Beat the eggs in a bowl.
  4. Mix the breadcrumbs and porridge oats together and then scatter on a plate.
  5. Place the flour on a plate.
  6. Roll the chicken strips in the flour.
  7. Dip the chicken into the beaten egg.
  8. Roll the chicken strips in the breadcrumb mixture until they are fully coated.
  9. Cook in the oven for 15–20 minutes until cooked through.
  10. Serve with salad
