  1. Place 1/4 cup of flour in a bowl, add salt and pepper, roll liver in the flour then place in the skillet which has olive oil in it. Fry liver on med heat until brown then turn and brown on the other side. Once you have turned the meat once spread sliced onion on top of the liver and cover with lid until done.
  2. For gravy remove liver and onions and put other1/4 cup of flour into the skillet let it brown just a little then add 1-2 cups of water to it and stir in figure 8 shape until thickened. Add salt and pepper to taste.
  3. Serve with some mashed potatoes and greens.
