  1. Heat half of the olive oil in a large saucepan over medium heat.
  2. Add the sliced onion and cook until translucent, about 3 to 4 minutes.
  3. Add mushrooms and minced garlic, and cook until the mushrooms release their liquid and begin to brown, about 4 to 6 minutes.
  4. Add kale and cook until wilted and the mushrooms are tender, about 5 to 7 minutes. Stir in lemon juice and half of the salt and half of the pepper. Remove from heat, cover, and keep warm.
  5. Sprinkle the cod fillet with the remaining salt and pepper.
  6. Heat the remaining olive oil in a large nonstick skillet over medium-high heat. Add the fish and cook until the flesh is opaque, about 2 to 4 minutes per side. Transfer the fish to a plate, add sliced cucumber, and top with the vegetable mixture.
  7. Serve garnished with chopped parsley.
