Lemon juice 2 tbsp or 30g
Directions
- Heat half of the olive oil in a large saucepan over medium heat.
- Add the sliced onion and cook until translucent, about 3 to 4 minutes.
- Add mushrooms and minced garlic, and cook until the mushrooms release their liquid and begin to brown, about 4 to 6 minutes.
- Add kale and cook until wilted and the mushrooms are tender, about 5 to 7 minutes. Stir in lemon juice and half of the salt and half of the pepper. Remove from heat, cover, and keep warm.
- Sprinkle the cod fillet with the remaining salt and pepper.
- Heat the remaining olive oil in a large nonstick skillet over medium-high heat. Add the fish and cook until the flesh is opaque, about 2 to 4 minutes per side. Transfer the fish to a plate, add sliced cucumber, and top with the vegetable mixture.
- Serve garnished with chopped parsley.
