  1. In a medium sauce pot, sweat the onion and garlic in 4 fl oz/120 mL of the stock over medium heat until the onions are translucent. Add the remaining stock and bring to a boil over high heat. Combine the stock mixture with the couscous in a pan 13 by 9 by 2 in/33 by 23 by 5 cm. Cover with foil and place in a 350°F/177°C oven until the couscous has absorbed all of the stock, about 3 minutes. Just before serving, stir in the herbs and coriander.
