Directions
- Pulse the onion, garlic, and ginger in the food processor until smooth.
- Heat olive oil in a large saucepan over low heat.
- Add the onion/garlic/ginger purée, cover, and cook about five minutes to mellow the flavor, stirring occasionally.
- Stir in the spices, then add carrots and water.
- Cook, covered, for 20-30 minutes, until carrots are tender.
- Add the fava beans, tomatoes, peas, coconut milk, coconut. Salt and pepper to taste.
- Simmer another 10 minutes.
- Serve alone or over ½ cup of brown rice, quinoa, or bulgar wheat.
