Ingredients

Directions

  1. Pulse the onion, garlic, and ginger in the food processor until smooth.
  2. Heat olive oil in a large saucepan over low heat.
  3. Add the onion/garlic/ginger purée, cover, and cook about five minutes to mellow the flavor, stirring occasionally.
  4. Stir in the spices, then add carrots and water.
  5. Cook, covered, for 20-30 minutes, until carrots are tender.
  6. Add the fava beans, tomatoes, peas, coconut milk, coconut. Salt and pepper to taste.
  7. Simmer another 10 minutes.
  8. Serve alone or over ½ cup of brown rice, quinoa, or bulgar wheat.
