Directions

  1. Soak kombu in water on the stove for 30 minutes.
  2. Bring water and kombu to a boil. Remove kombu and save for another recipe
  3. Add bonito flakes and cook for 30 seconds. Remove bonito and save for furikake or another recipe.
  4. Add miso and mix to dissolve.
  5. Slice 5 pieces daikon thinly with a vegetable peeler into the soup
  6. Cut off the ends of the mushrooms. Separate mushrooms and add to soup.
  7. Heat soup to boiling and remove from stove.
