Directions
- Prepare sweet potato: wrap in paper or cloth towel, prick all over with a fork, and cook in microwave for about 7 minutes total (flip over halfway through). Or, prepare as desired by steaming whole or chopped, or baking in the oven.
- Make dressing for the beans: Combine lime juice, nutritional yeast, chili powder, cumin and salt in a bowl until thoroughly mixed. Taste and adjust seasonings as you like.
- Warm the cooked beans as you like on stove or microwave (optional).
- Pile the beans on top of the greens (substitute any greens raw or cooked that you like), and pour dressing over beans and greens. Enjoy with sweet potato on the side, and spread coconut oil and cinnamon atop the potato.
