- 300g cubed chicken breast (this is enough for 2 servings) • 1 tsp onion powder • 1 tsp garlic powder • 1 tsp salt & pepper • 1 tbsp paprika • 1 tsp cumin • 1 tsp chilli powder • 1/2 lime juice - Mix and let it marinate as long as you can - Cook for 3-4 mins on each side on medium heat, you should get some nice sear marks then set aside
- For the green sauce (you will only use a small amount per serving): • 1 medium avocado (approx 100g) • 100g low fat yogurt (greek yogurt is great) • A good handful of fresh cilantro or parsley • 1 tsp garlic powder or 1 garlic clove • 1/2 tsp salt • 20-30ml of water (add more if too thick) - Blend till smooth
- For the cilantro lime rice: - Water in a pot, add 1 tsp salt with the rice - Once your rice is cooked, add chopped cilantro and lime juice while the rice is still steamy. Mix and let it sit to absorb the flavours
- For the sides: • 1/2 red onion • 1/2 red and green bell pepper • 40g black beans • 40g sweetcorn (I sprinkled some paprika on these) • 1/2 tsp of the same seasonings used for chicken • Serve with 120g cooked rice
