- 1. Preheat oven to 450 degrees F. Cut onion into wedges. Dice eggplant into 1-inch pieces. Toss all together in a bowl with olive oil, half the harissa and salt. Spread on a roasting pan or rimmed baking sheet and roast 10 minutes
- 2. Meanwhile, season chicken breast with salt and pepper, then spread with a layer of hummus. Remove pan from oven and lay chicken breast on top. Roast 20 minutes more, or until vegetables are soft and chicken breast is no longer pink in the center.
- 3. Meanwhile, chop parsley. When done, drizzle chicken breast with lemon juice and top vegetables with remaining harissa. Sprinkle with parsley and enjoy.
