Kale White Bean and Pesto Salad

Ingredients

• Kale

  Raw

  1 cup, chopped or 67g

• Grape tomatoes

  Red, ripe, raw, year round average

  ¼ cup grape tomatoes or 37g

• White beans

  Mature seeds, canned

  ½ cup or 131g

• Sauce, pesto, Classico, basil pesto, ready-to-serve

  ⅛ cup or 31g

• Lemon juice

  Raw

  ¼ lemon yields or 12g

Directions

1. Finely chop the kale, removing any hard stems, and place it in a large bowl.
2. Rinse and drain the white beans. Slice the grape tomatoes in half and add both to the bowl with the kale.
3. Add the pesto and toss everything with lemon juice until well coated.
