  1. For The Biscuit Base: Blitz The Biscuits In A Good Processor Or Bash Them In A Bowl To Fine Crumbs. Melt the butter and mix into the biscuits. Press the mixture into a baking tin.
  2. For the cheesecake filling: Melt the chocolate and leave aside. Whisk the cream cheese, icing sugar and vanilla essence until smooth. Add the melted chocolate and stir to combine. Add in the cream and whisk til thick. Spread the mixture over the biscuit base and refrigerate over night.
  3. For the topping: Once the cheesecake has set remove from the tin carefully. Melt any extra chocolate and drizzle over the cheesecake. You can also add a block of chocolate to each slice.
