Directions
- soak dried mushrooms in warm water for 30 minutes. remove, rinse, and squeeze dry. Chop in bite size pieces.
- Chop Onions While Mushrooms Are Soaking. measure out the soy sauce, and scramble eggs in a bowl.
- saute onions for about 1 to 2 minutes over medium high heat. add mushrooms and saute for 1 to 2 more minutes. remove onions and mushrooms from pan.
- add canola oil and cooked brown rice and cook over medium high heat, stir frying until hot, about 2 minutes.
- turn heat to medium, push rice to sides and add eggs to the middle of the pan. lightly stir egg until softly scrambled. return vegetables to pan. add soy sauce and green onions and toss gently.
