Ingredients

Directions

  1. Drain and rinse the chickpeas. Mash them into a paste in a large bowl. Set aside.
  2. Mince the fresh parsley leaves. Put 2 Tbsp in the chickpea bowl, along with 6 cloves minced garlic, and 2 Tbsp lemon juice.
  3. Put the remaining garlic and lemon juice in a small bowl. Set aside.
  4. Add 4 Tbsp olive oil, 6 Tbsp flour, 4 tsp coriander, 4 tsp cumin, 2 tsp salt, and 1 tsp pepper to the chickpea bowl. Stir until well combined. Form the mixture into 12 patties and set aside.
  5. Heat 1 Tbsp olive oil to a nonstick skillet and heat over medium-high. Once heated, add half of the patties and cook until golden brown and crispy; approx. 3-5 mins per side. Repeat with the remaining patties and transfer the patties to a plate.
  6. Halve the tomatoes and chop 1 and a half cucumbers and add them to the salad bowl with the parsley. Coarsely grate the remaining half cucumber and add it to the small with the garlic and lemon juice.
  7. Add the yogurt to the small bowl, season with 1/2 tsp salt and 1/2 tsp pepper, and mix it all together to make the Tzatziki.
  8. To the salad bowl, add the remaining 2 Tbsp of olive oil, 1 Tbsp vinegar, 1 tsp salt, and 1/2 tsp pepper; toss to combine.
  9. To serve add 3 patties to a plate and 1/4 of the salad and Tzatziki sauce on the side. Enjoy!
