  1. Preheat oven to 375 degrees. Line baking sheet with parchment paper.
  2. Using slicing blade of a food processor, or a mandoline slicer, thinly slice parsnips, leaving skin on.
  3. In a large bowl, gently mix the sliced parsnips and remaining ingredients.
  4. Place parsnips in an even layer on baking sheet, making sure they don't overlap. Bake for 15 minutes, flip, and bake for 15 more minutes, or until golden brown and crispy.
