Directions
- Preheat oven to 350 degrees Fahrenheit.
- Wash and slice peaches into a large bowl. Toss with 2 tsp sugar, a pinch of powdered ascorbic acid, one tap. Almond extract, and one tsp. Vanilla bean paste. Set aside.
- In the bowl of a stand mixer fixed with the paddle attachment, combine flour, sugar, cinnamon, salt and butter. Process until mixture forms pea sized chunks. Add oatmeal until combined.
- Butter an 8x8 baking dish, and pour the peach mixture into it. Crumble the oat topping mix over the peaches.
- Bake in preheated oven for 30 minutes.
