- RIGGING Rinse the meat, cut into 2 or 3 parts. Put in a large pot, pour cold water, add salt and bring to a boil. Skim, reduce heat, cover and cook for about 40 minutes. Peel the carrots, parsley and celery. Do not peel the onion, wash it. Put the vegetables in the soup, add: bay leaf, allspice, cover and cook on moderate heat for about 30 minutes. Peel the potatoes and cut into cubes. Add to the soup, boil, cover and cook on low heat for about 10 minutes. Add the rinsed and chopped sauerkraut as well as cumin and marjoram, boil for about 20 minutes. Finally remove onions, celery, parsley and parsley. Add freshly ground black pepper, decoction try, if necessary, add another half teaspoon of salt. Cut bacon into slices and then into strips. Heat a small frying pan with a tablespoon of clarified butter or oil, add bacon and brown on two sides (about 10 minutes).
