Directions

  1. Cut chicken into edible sized cubes. Then, cook chicken over medium heat seasoned with salt with about a tsp of cooking oil, about 5 minutes per side or until cooked through completely without any pink in the middle.
  2. Meanwhile, chop scallions and jalapeño. When ready add to a separate pan with cooking oil and stir fry until soft. Add cilantro after, only for a minute so it softens up.
  3. When chicken is cooked, add the second mixture to it and stir all together. Since chicken is cooked, turn heat off when everything is mixed well.
  4. Enjoy with white rice or quesadillas.
