Directions
- In a large pot, combine the BBQ sauce and 1/3 cup water. Bring to a gentle boil over medium heat.
- Season chicken meat with salt and pepper. Add the chicken to the pot and cover. Poach until the chicken is cooked through, 12-15 min.
- Meanwhile, wash and dry all produce. Thinly slice the green onions. In a medium bowl, combine the mayonnaise, vinegar, 1 tsp sugar, and green onions. Season with salt and pepper. Set aside.
- Halve the buns, then arrange them cut-side up on a baking sheet. Toast in the center of the oven until golden brown, 1-2 min.
- Remove cooked chicken thighs from the sauce pot to a large plate. Increase the heat to medium-high. Continue simmering until the liquid reduced by about half, 4-5 min.
- Meanwhile, using two forks, shred the chicken into smaller pieces using forks. When the sauce is reduced, return the chicken to the sauce pot.
- Top the buns with shredded chicken, coleslaw, and lettuce.
