Directions
- Prepare:
- Preheat the oven to 350F.
- Lightly butter a 9-by-13-inch glass or ceramic baking dish.
- In a medium bowl, whisk the flour, cream of tartar, baking soda, arrow root and salt. Set aside.
- In a large bowl, using a mixer, cream eggs, sugar and 1 tsp vanilla at medium high speed for about 10 minutes or until light and fluffy.
- Turn mixture speed to low and gradually add half of the flour mixture to cream mixture until blended. Gradually add almond milk, then add the other half of the flour mixture until blended. Pour the batter into the prepared baking dish.
- Cook:
- Bake batter in prepared baking dish for 25+ minutes.
- While cake is baking, place oat milk, evaporated milk, 1/2 tsp cinnamon and cloves in a saucepan. Over medium high heat, whisk and bring to a boil. Reduce the heat. Simmer for 3 minutes. Cover and remove from the heat. Allow to sit for 10 minutes. Add condensed milk and 1 teaspoon vanilla and 1/2 teaspoon cinnamon to mixture. Mix well. Cover and allow to cool completely.
- Check cake after 25 minutes. Cake is done when the center of the cake springs back after gently touching. When cake is done, remove from oven and place on a cooking rack. Allow cake to cool for an hour.
- Once the cake is cooled, poke holes all over the cake with a fork. Slowly pour the milk mixture over the entire cake, allowing the milk to seep into the holes of the cake. Cover the cake with plastic wrap and refrigerate overnight.
- Assemble:
- Place oat based whipped topping on top of cake and smooth it out with a butter knife.
- Drizzle with honey
