Directions
- Heat a large non stick pan over medium to high heat, then spray well with cooking spray and add in your chicken breast.
- Season the chicken with a bit of salt and allow to cook until slightly browned and fully cooked through; once cooked add to a plate and set aside.
- To the same pan add some more cooking spray, then the minced garlic, tomato purée, and sriracha and cook until fragrant (about 30 seconds).
- Add your stock, brown sugar, peanut butter, and hoisin sauce to a pan and cook, stirring constantly, until it comes to a boil; reduce heat, then add the cooked chicken back to the pan and give everything a good stir.
- Divide chicken into bowls with your rice.
