  1. Heat a large non stick pan over medium to high heat, then spray well with cooking spray and add in your chicken breast.
  2. Season the chicken with a bit of salt and allow to cook until slightly browned and fully cooked through; once cooked add to a plate and set aside.
  3. To the same pan add some more cooking spray, then the minced garlic, tomato purée, and sriracha and cook until fragrant (about 30 seconds).
  4. Add your stock, brown sugar, peanut butter, and hoisin sauce to a pan and cook, stirring constantly, until it comes to a boil; reduce heat, then add the cooked chicken back to the pan and give everything a good stir.
  5. Divide chicken into bowls with your rice.
