  1. To make the mustard sauce, heat the wine in a small saucepan over medium heat. Add the shallots and sweat until translucent. Add the velouté and mustard. Reduce to a coating consistency. Reserve.
  2. Heat the butter in a large sauté pan over medium heat. Add the green onions, tomato, and mushrooms and sauté until the mushrooms are tender. Remove from the pan and cool before assembling the gratins.
  3. To assemble individual gratins, place 2 oz/57 g mushroom mixture in an individual gratin dish and top with 31⁄2 oz/99 g scallops. Coat the scallops evenly with the sauce and top with bread crumbs. Cover and refrigerate until needed.
  4. Broil or bake in a 500°F/260°C oven until the bread crumbs are golden brown and the scallops are cooked through, about 5 minutes. Serve warm.
