  1. Chop scallions and crumble feta. Heat a pan over medium-high heat and spray with non-stick spray. Add sausage to the pan and cook for 5-10 minutes until sausage is cooked through. Remove from pan, chop, and set aside, returning pan to the heat.
  2. Beat the eggs and add to the skillet with the chopped scallions and chopped sausage. Stir slowly over medium-low heat until the eggs reach your desired doneness. Sprinkle in the feta cheese and stir to combine and soften the cheese. Serve and enjoy!
