- Prepare noodles according to packet instructions. In a small bowl, combine the peanut butter, sweet chili sauce, soy sauce and 1/4 cup of boiling water. Stir until sauce reaches a smooth consistency. Set aside. Heat a non-stick skillet over medium-high heat. Add the chicken, stir-fry for 3 to 4 minutes, until browned and cooked through. Remove and set aside. Add bell peppers to the skillet and cook for 2 to 3 minutes, until heated through. Divide the noodles between two serving bowls. Top with the chicken and bell peppers. Drizzle over the spicy peanut sauce. Toss to combine.
