- Heat olive oil in a pan
- Dice the bell pepper and mushrooms
- Saute mushrooms, bell pepper. Set aside
- Saute spinach until it wilts. Set aside
- Cook eggs in pan to form an omelette. When completely set (with top still glistening but not runny), add mushrooms, bell pepper, spinach, and goat cheese.
- Fold omelette to contain the ingredients. Remove from pan and let stand 1 minute. Serve
