  1. Adjust rack to top position and preheat oven to 425 C. Wash and dry all produce, cut potatoes to 1/2 in wedges. Half, peel, thinly slice shallot. Peel garlic, places cloves into a center of a piece of foil and cinch into a packet.
  2. Toss potatoes on a baking sheet, add fry seasoning, salt, and pepper. Add garlic foil packet to the same sheet. Roast on top rack until potatoes are tender: 20-25 mins.
  3. Pat steak dry with paper towels, season with salt and pepper. Add steak to preheated medium-high heat. Cook 3-5 mins per side. Set aside.
  4. Add shallot, green beans, and 1/3 cup of water to the pan. Season with salt and pepper. Cook and still until the water evaporated and green beans are tender. Add more water to soften if necessary.
  5. Slice steak against the grain, remove garlic from foil, cut, and transfer into a bowl. Mash with salt, melted butter, and mayo.
