- Dice the onion, mince the garlic, and dice the sweet potatoes.
- Heat the olive oil in a large pot over medium-high heat. Add the onion and sauté until translucent and soft, about 2 minutes.
- Add the minced garlic and curry powder, and sauté for another 2 minutes. Stir in the sweet potatoes and cook for 2 more minutes.

- Add the peanut butter and coconut milk to the pot. Cover and let simmer for 30 minutes, stirring occasionally.
