  1. Preheat the oven to 400°F. Prick the sweet potatoes all over with a fork and bake for 45 minutes to 1 hour, until tender.
  2. In a medium pan, heat olive oil over medium heat. Sauté the onion and garlic until the onion is translucent. Stir in the chili powder, cumin, and coriander, and cook for about 2 minutes until fragrant.
  3. Stir in the black beans and salsa, and cook until the beans are heated through.
  4. Slice the sweet potatoes down the middle and divide the black bean mixture among them.
  5. Top each stuffed sweet potato with 2 tablespoons of Greek yogurt, shredded cheese, and 1 tablespoon of chopped cilantro.
