- Prep noodles according to package for a cold dish. Heat edamame in microwave or in a pan. Cut tofu into cubes. Heat a pan to medium heat, spray oil lightly and add tofu. Brown tofu on all sides, I usually flip every 3-4 minutes.
- chop roughly 2-3 tbsp of cilantro and add to your serving bowl with the shredded carrots and cabbage. (you could also use like a raw cole slaw mix instead of buying ingredients separately). Add the drained noodles to your bowl as well.
- Add edamame to your bowl and mix all the ingredients well. top with tofu cubes, peanut sauce and enjoy :) i also like to add some peanuts or cashews on top or sesame seeds. you could also add any other veggies you like (peppers, lettuce, cucumber, etc).
