  1. Prep noodles according to package for a cold dish. Heat edamame in microwave or in a pan. Cut tofu into cubes. Heat a pan to medium heat, spray oil lightly and add tofu. Brown tofu on all sides, I usually flip every 3-4 minutes.
  2. chop roughly 2-3 tbsp of cilantro and add to your serving bowl with the shredded carrots and cabbage. (you could also use like a raw cole slaw mix instead of buying ingredients separately). Add the drained noodles to your bowl as well.
  3. Add edamame to your bowl and mix all the ingredients well. top with tofu cubes, peanut sauce and enjoy :) i also like to add some peanuts or cashews on top or sesame seeds. you could also add any other veggies you like (peppers, lettuce, cucumber, etc).
