• Mori-nu tofu

• Tortillas

  Ready-to-bake or -fry, flour

• Sour cream

Directions

1. cut bell peppers and onions into roughly even pieces, toss in olive oil, pepper, cumin, tajin, then roast at 425 until they begin to char slightly
2. drain, dry, then slice the tofu into 12 even pieces. season tofu with cumin and tajin, or salt and pepper, then fry until golden brown, but still plump
3. warm tortillas, assemble fajitas, enjoy
