Ingredients

Directions

  1. Crack the eggs into a bowl. Add the dill, salt, and pepper. Beat with a fork. Stir in chopped scallion and add salt and pepper.
  2. Put a small saucepan on medium to medium-low heat. Melt butter in pan. Once the butter is melted, add your egg mixture and start stirring rigorously.
  3. Accumulate bits of cooked egg until, until most of your mixture looks like barely cooked scrambled egg. If you'd like to add cheese, this is the point, but note that the original French omelette doesn't feature cheese so don't sweat it.
  4. Once all parts of the egg are cooked through, but things are still very creamy, let your the eggs sit for about 20 seconds, to create the outside of your French omelette, then fold and serve.
