  1. Wash sweet potatoes thoroughly, pat dry, and pierce 3-4 times with a fork. Place individual potato on microwave-safe plate and microwave 5 minutes, turning halfway through. If potato isn’t tender after 5 minutes, continue microwaving in 30 second increments until done.
  2. Carefully remove potatoes from microwave and split open on a plate. Set aside.
  3. Slice avocado and dice basil. Divide avocado and basil between the potatoes, along with the soy yogurt, sesame seeds, and chili powder. Season with a dash of lemon juice, salt, and pepper. Enjoy!
