- Run zucchinis through a spiralizer to create noodles. If you do not have a spiralizer, you can carefully use a peeler. Set aside.
- Heat a large saucepan over medium-high heat. Add 1 tablespoon of olive oil, then the chopped onions. Sauté until translucent, about 2-3 minutes.
- Add minced garlic and sauté for 30 seconds. Add sliced mushrooms and cook until browned, about 4-5 minutes.
- Add ground turkey and sauté until cooked through, about 6-10 minutes.
- Add whole plum tomatoes and tomato paste, breaking up the tomatoes with a spoon. Season with salt and pepper to taste.
- Simmer sauce for 10 minutes.
- Meanwhile, heat a large skillet over medium-high heat. Add the zucchini noodles and flash sauté for 2-3 minutes, stirring constantly. Remove from pan and drain any excess water.
