- Heat a nonstick skillet over medium heat. Add the turkey and cook until no longer pink. Season with salt and pepper and remove from pan. Add the butter to the skillet. Add the eggs and cook for a minute until the edges are set. Lift the edges carefully and let the liquid flow underneath the edges. When eggs are almost cooked, top with the cooked turkey and mozzarella. Fold in half, cook until eggs are done and top with the basil. Serve with the peaches.
