  1. Prepare quinoa as per package directions; set aside.
  2. Heat a pan over medium heat. Sauté chopped apple pieces until they are soft and tender, about 5 minutes. Combine with spices and ground gingerbread. Add spiced apples, ½ tbsp maple, and molasses to quinoa and stir to combine. Add almond milk as desired to make creamier.
  3. Taste, adding more spices as desired. Gently reheat over low, adding more almond milk if necessary along the way. Drizzle with remaining 1 tbsp maple syrup and a dash of cinnamon or pumpkin pie spice.
