  1. Heat the butter in a nonstick skillet over medium heat. Add the mushrooms and cook until browned and soft. Season with salt and pepper and remove from the pan with a slotted spoon. Add the eggs and cook for a minute until the edges are set. Lift the edges carefully and let the liquid flow underneath the edges. Season with salt and pepper and add the mushrooms, brie, cranberries and thyme. Fold the omelet in half and continue cooking until done.
