Directions

  1. Cook 1/2 cup quinoa as per package directions (yield: 1.5 cup)
  2. Lay Nori on cutting board, shiny side down.
  3. Spread a small spoonful of vegan mayonnaise and chili sauce onto nori sheets.
  4. Spread a scoop of quinoa onto nori sheet.
  5. Slice avocado and add to nori sheet.
  6. Add a handful of coleslaw mix.
  7. Roll tightly and add soy sauce (or liquid aminos) to seal. Carefully slice and and enjoy.
