Directions
- place the tuna in a bowl with the poke dressing ingredients. (sesame seeds, sesame oil, soy sauce, rice vinegar, scallions). Stir to combine and set aside to marinade
- while the tuna marinades, combine avocado, jalepeno, cilantro and lime in a medium sized mixing bowl and season with salt and pepper. Whisk together until creamy. ATaste and adjust if needed.
- To cook rice bring 1 1/2 cup water to a bowl then add rice and cook for 5 minute. Bring heat down to low and cook for another 1-15 minutes or until rice is soft. Let sit in remaining water to absorb. Drain any excess water. Serve.
- Divide tuna poke using a slotted spoon to portion out the poke, to avoid extra liquid. Serve.
